Fast Keto Vegetarian Dinner
Looking for a quick dinner recipe that doesn’t include processed foods and stays fresh as a yummy leftover for lunch tomorrow? Well here is a recipe that will certainly be a go to for you once you try it.
Coconut Cauliflower Rice with Veggies
For the coconut cauliflower rice simply take a fresh head of cauliflower and chop of the stem. Wash it well as you break off the florets into a colander. Let it dry. Then then put the florets in a food processor and pulse to make it look like rice. Next saute the “rice” in a pan with a tablespoon of coconut oil or avocado oil. I don’t recommend olive oil as it’s not an oil to be heated. Saute for about a minute and then add 1 can of coconut milk. Continue cooking for another 10-12 minutes until all the coconut milk is absorbed.
Next for the veggies! Wash 2 cups of broccoli florets. Wash and chop one bell pepper into 1 inch pieces. I prefer the orange bell pepper but pick the one you like best. Chop a yellow onion into 1 inch pieces. Set aside.
Grease a Pyrex casserole pan or baking sheet with oil or organic butter. Spread the veggies on top and preheat the oven at 400 degrees. While that is baking in a small bowl add 1/4 of soy sauce, 1 clove of garlic copped, 1 teaspoon of ginger finely copped and a 1/4 cup of water. If you are full blown Keto you can add some Keto friendly sweetener for taste. Otherwise add 2 tablespoons of raw honey. Stir until dissolved.
Pour half the sauce over the veggies and heat in oven for 8-10 minutes. Serve hot over the cauliflower rice pouring portions of the remaining sauce on top. Garish with green onions.
This recipe does great as a reheat. Pack any remaining into a container for work or school the next day. Enjoy!
